Acai & Cherry Chocolate Muffin / Vegan, Sugar Free, Gluten Free
Ingredients
Rice Flour | 2 cups |
Urth Essence Acai&Cherry Chocolate | 1/2 bar |
Erythritol or sugar substitute | 3/4 cup |
Unsweetened almond milk | 1 cup |
Olive oil | 1/3 cup |
Vanilla extract | 1 tsp |
Baking powder | 2.5 tsp |
Himalayan pink salt | 1/4 tsp |
Cooking process

Make the batter: Mix together the wet ingredients with the erythritol. In a large mixing bowl, mix together the flour, baking powder and salt. Pour the wet ingredients into the dry ingredients and mix until just combined.

Add chocolate: Toss in the small chocolate pieces and gently fold them into the batter.

Fill muffin tin: Fill each muffin lined hole with batter.

Bake: Place in preheated oven set at 350 degrees F., and bake for 30 minutes. Let cool a few minutes and enjoy warm or at room temperature.
