Acai & Cherry Chocolate Muffin / Vegan, Sugar Free, Gluten Free
|Rice Flour||2 cups|
|Urth Essence Acai&Cherry Chocolate||1/2 bar|
|Erythritol or sugar substitute||3/4 cup|
|Unsweetened almond milk||1 cup|
|Olive oil||1/3 cup|
|Vanilla extract||1 tsp|
|Baking powder||2.5 tsp|
|Himalayan pink salt||1/4 tsp|
Make the batter: Mix together the wet ingredients with the erythritol. In a large mixing bowl, mix together the flour, baking powder and salt. Pour the wet ingredients into the dry ingredients and mix until just combined.
Add chocolate: Toss in the small chocolate pieces and gently fold them into the batter.
Fill muffin tin: Fill each muffin lined hole with batter.
Bake: Place in preheated oven set at 350 degrees F., and bake for 30 minutes. Let cool a few minutes and enjoy warm or at room temperature.
